Shrimp-watercress sauce (Sauces)1 litre


Ingredients
75 g Glace de Crustacés
6 dl (# 20 fl oz) water
2 dl (# 7 fl oz) cream
100 g shrimp
80 g mashed watercress
50 g dry roux
100 g butter
1 dl (# 4 fl oz) Riessling
+/- 4 g salt

Method
Slightly reduce the Riessling. Add water, Glace de Crustacés, cream, mashed watercress and shrimp. Thicken with the roux. Mount in the butter and season to taste with salt.

How to serve
A delicious sauce with fillet of plaice or fillet of sole stuffed with shrimp mousse, broccoli and mashed potatoes.
