Ingredients 75 g Glace de Crustacés
6 dl (# 20 fl oz) water
2 dl (# 7 fl oz) cream
100 g shrimp
80 g mashed watercress
50 g dry roux
100 g butter
1 dl (# 4 fl oz) Riessling
+/- 4 g salt

Method Slightly reduce the Riessling. Add water, Glace de Crustacés, cream, mashed watercress and shrimp. Thicken with the roux. Mount in the butter and season to taste with salt. |
How to serve A delicious sauce with fillet of plaice or fillet of sole stuffed with shrimp mousse, broccoli and mashed potatoes. |
