Game stock with wild mushrooms (Starters)10 servings


Ingredients
400 g mushrooms (shiitake, oyster mushrooms, chanterelles, big button mushrooms)
2.3 l (# 78 fl oz) water
100 g Glace de Gibier
100 ml (# 4 oz) red port-wine
Salt


Method
In a pan, mix the glace, port-wine and water. Bring to a boil. Slice the mushrooms and add them to the stock. Season to taste with salt.
