Cassolette of scampi (Main courses)8 servings


Ingredients
100 g Glace de Crustacés
7 dl (# 24 fl oz) cream
150 g butter
½ dl (# 2 fl oz) vermouth
150 g button mushrooms, cut
48 peeled fresh scampi without tail
1 clove of garlic
10 g cut chives
½ dl (# 2 fl oz) olive oil

Method
Sauté scampi and mushrooms in olive oil for a few minutes. Add vermouth, cream, Glace de Crustacés and garlic. Reduce a little and then mount in the butter. Garnish with chives.

How to serve
Serve with pasta and stir-fried vegetables.
